Turns diners' taste complaints into measured recipe changes, shows which dishes that are off balance cost subscribers, and checks each change brought the dish back to centre.

Each dish is shown as a channel on a sound mixing desk, with sliders for salt, spice, portion, texture and heat, set by what diners say.
The risotto channel sounds off-key. Its salt slider is stuck at +3, with 22 mentions from subscribers flagged as likely to cancel.
The chef cuts the salt by 10%.
Two weeks later, at the weekly menu review, the salt slider moves back to centre and the tone turns into a chord. The chef photographs the desk for the kitchen group.
