Ranks places by how much they beat their own result on the same night last season, so readiness pledges are checked night by night and small places can win on improvement rather than size.
The moment
Each branch races a "ghost" of itself: its own result on the same night of last peak season.
On the 27th night, a village branch that ranks last on raw numbers leads the race. It is 40% ahead of its last peak season, because the extra till it pledged opened on time.
The city flagship falls behind its ghost. The ghost card quotes a customer from the same night last year: "an hour at the till, and dinner is cold".
